Ingredients
- 5 oz. bacon, diced
- 2 lbs chicken breasts
- 2 tbsp butter
- 3 garlic cloves, minced
- 7 oz. (6½ cups) baby spinach
- 1 cup heavy whipping cream
- 1 cup (2¾ oz.) shredded Parmesan cheese
- salt and pepper
- 1¼ lbs cauliflower
Instructions
- Cook chicken on a sheet pan in an oven on broil turn after 5 min then cook until thermometer reads 165 degrees about another 6-8min. Then cook/steam cauliflower.
- In a sauce pan over medium low heat add butter and garlic unil melted.
- Add Spinach to the garlic butter and cook until tender then add bacon.
- Add cream and bring to boil then add cheese.
- Cube chicken salt and pepper and add to the pan. then add cooked califlower and any extra salt and pepper to taste and serve.
Tips: Can sub the cauliflower for zucchini zoodles.
